The place
The Eagle name has moved around Denver more than once. This is where it settled: a low brick building on West Colfax with two bars, a back room, a kitchen and a patio that stays open through the cold because the heaters were the first thing we bought.
It is a leather and Levi bar, which in practice means the dress code is whatever you want it to be. Some nights the room is all gear. Some nights it is work boots and a hoodie and somebody arguing about a hockey game. Both are the Eagle. Neither needs a reason.
The mirror ball above the main bar came with the building. It has outlasted three owners and one fire inspection.
Kitchen and bar
The full board is on the wall inside and it changes with what the kitchen can get. These nine have not moved in three years, because every time we try to move them somebody complains.
Served until midnight, every night
Two smashed patties, American cheese, grilled onion, house pickle, on a brioche bun. The reason the kitchen stays open until midnight.
A pound of them, dry-rubbed and finished on the grill outside. Hot, honey-hot, or the green chile rub that regulars order without reading the board.
Thick-cut fries under Pueblo green chile and a fistful of jack cheese. Add a fried egg for two dollars and call it dinner.
Shaved steak, caramelised onion, provolone and horseradish cream, pressed flat on rye until the edges go dark.
Twelve lines, mostly Colorado
Brewed four miles east of the front door and poured cold enough to hurt. Our best seller since the day we opened.
Pine-heavy, unapologetic, and the only IPA the bartenders will argue about with a straight face.
Pours are heavy and we do not apologise
Rye, poured heavy, no ceremony. Ask for the good shelf and we will happily take more of your money.
Bourbon, amaro, orange bitters and a burnt orange peel. Stirred long, served short, named after the back bar light.
Whatever lager is coldest, whatever rye is nearest. The house drink, and the only one that comes with instructions.
Good to know
The kitchen runs until midnight seven nights, later on event nights if the cook is in the mood. Vegetarian versions of most of the board exist, they are just not written down, so ask.
